This is our second year working with Café Granja La Esperanza but first offering this coffee. The hybrid washing is an innovative process in which the coffee undergoes two short fermentations before being fully washed and mechanically dried. The first fermentation takes place in the entire coffee cherry for 36 hours. The coffee is then de-pulped and dried within the mucilage layer for an additional 24 hours and finally fully washed and dried mechanically for 5 days.
This coffee is wonderfully balanced and sweet with a pleasant red apply acidity and velvety mouthfeel.
